Here’s a meat-free recipe from www.self.com that’s low in saturated fat and high in protein. Polenta is a great source of fibre too and this particular dish meets almost a quarter of our daily fibre needs.

Polenta is a golden-yellow Italian cornmeal made from dried, ground maize and is a staple dish of northern Italy. Polenta makes a great gluten-free alternative to flour in cakes, biscuits and pastries.

This week’s recipe is taken from Marie Claire’s Real Simple cookbook – minus the anchovies! Pasta is a quick and easy way to beat those Monday blues and the perfect accompaniment to an episode of Grey’s Anatomy.

Broccolini is thin-stemmed broccoli, a great texture to enjoy with penne pasta. I found it at my local Spar and it’s also available in larger Woolworths stores. If you can’t manage to find the thin-stemmed variety, regular broccoli will also do the trick.
